Chocolate Chip Coconut Cookies

Serves: 4 dozen
  • ¾ cup sugar
  • ¾ cup packed brown sugar
  • 1 cup of butter (stick margarine will work as well)
  • 1 egg
  • 2¼ cups all purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup of shredded coconut or toasted coconut
  • 2 cups of chocolate chips - semi-sweet or milk chocolate
  1. Preheat the oven to 375F
  2. mix the sugars and butter with an electric mixer or by hand in a large bowl until fluffy
  3. add the egg and continue until well combined
  4. in a separate bowl sift and mix the flour, baking soda and salt
  5. slowly add it to your butter/sugar/egg mixture and mix until the dough is stiff
  6. add in the coconut and chocolate chips and stir till combined
  7. drop by tablespoon onto an uncreased cookie sheet (or a silpat covered sheet). Leave about 2 inches of space between cookies
  8. bake for 8-10 minutes until golden brown around the edges - the centres will be soft
  9. remove from the cookie sheet immediately after taking out of the oven and cook on a baking rack
The recipe makes approximately 4 dozen cookies so you will be baking multiple trays of cookies - allow the extra time for this before you start!
