Simplicity: Stone Fruit, Feta & Mint Salad
  • a few stone fruits like peaches, nectarines or plums, sliced in half
  • maple syrup or apple pie syrup for glaze
  • feta cheese
  • mint leaves
  1. place the fruit halves skin face up on a broiler pan (you can also do them on the grill) and broil for a few minutes
  2. turn right side up and glaze with syrup
  3. allow them to broil until fruit softens and syrup starts to caramelize (but don't let it burn!)
  4. remove from grill and cut up into slices
  5. arrange on a plate and sprinkle with crumbled feta
  6. arrange mint leaves between slices
