Lemon Roasted Asparagus Wrapped in Bacon

  • 1 bundle of asparagus
  • 1 tsp of kosher salt
  • pepper to taste
  • 1 tbsp olive oil (estimated)
  • 1 tbsp lemon juice
  • 1 slice of bacon per 4 to 5 stalks of asparagus
  1. preheat oven to 400F
  2. wash asparagus and chop of the ends - I usually chop of about half way up the spear to get rid of the woody parts of the stems
  3. place in a large bowl with salt, pepper and lemon juice
  4. add olive oil. one tbsp in generally enough but if you have a large bundle of asparagus you may need more. you want the spears to be evenly coated with oil before cooking
  5. toss all the ingredients in the bowl until the spears are evenly coated with the added ingredients
  6. take 4-5 spears and form a small bundle with them
  7. wrap the bundle with a slice of bacon so that just the ends and tips poke out
  8. repeat with more bundles until you've used up all the asparagus - I usually get 4-5 bundles out of a bundle of asparagus
  9. place bundles on the oven broiler pan (not a cookie or roasting sheet - you want the bacon drippings to be able to drain off)
  10. roast for 10 mins, turning a few times to evenly cook the bacon
  11. I finish up by turning the oven to broil for a few minutes at the end so the bacon can crisp up a little bit - it cooks a bit slower than the asparagus - just keep an eye on it until the bacon is cooked to the consistency you prefer
