Chocolate Rhubarb Muffin Choices

  • 1¼ cups flour
  • ¼ cup cocoa powder
  • ¾ cup sugar
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ⅓ cup canola oil
  • 1 egg
  • ⅓ cup milk
  • 1 teaspoon vanilla
  • ½ cup sour cream
  • 1 cup rhubarb chopped into 1 inch pieces
  • 1 tbsp chocolate chips for topping
  1. Preheat oven to 400F
  2. Whisk together flour, cocoa powder, sugar, salt and baking powder in large bowl.
  3. In a small bowl whisk together oil, egg, milk and vanilla and sour cream
  4. Pour the wet ingredient into dry ingredients and stir just until moistened - batter will be lumpy
  5. Gently stir in rhubarb
  6. Spoon batter into a greased muffin pan or use paper muffin/cupcake liners - you will have enough for 12 regular sized muffins
  7. Top with a sprinkle of chocolate chips
  8. Bake approximately 20 minutes
  9. A toothpick inserted into the muffins should come out clean when done
  10. Remove from muffin pan and cool on wire racks
