  • 1 large bunch of spinach with stems (not the prepackaged spinach leaves)
  • 2 tbsp tahini
  • 1 tsp mirin
  • 1½ tbsp soy sauce
  • 1 tsp agave nectar
  • 1 tbsp sesame seeds for garnish (we left them out by accident)
  1. bring a large pot of water to a boil and blanch spinach for 30 seconds - you may have to do the spinach in two batches. We used tongs and just held the tongs in the water for 30 seconds
  2. immerse in ice cold water to stop the cooking
  3. drain and squeeze out all the excess water
  4. you can chop smaller if you like but we didn't bother
  5. mix tahini, mirin, soy sauce and agave together well... it will thicken up a bit as you work.
  6. pour dressing over spinach and mix well
  7. eat!
