Chocolate Chip, Toffee and Potato Chip Cookies

Serves: 5 dozen
  • 1 cup of butter (2 sticks)
  • 1 cup lightly packed brown sugar
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1 cup chocolate chips
  • ½ cup toffee bits or chopped nuts
  • 2 cups of crushed potato chips
  1. preheat oven to 350F
  2. beat butter and sugars together until light and fluffy
  3. add eggs and vanilla and continue to mix until well blended
  4. in a separate bowl whisk together flour and baking soda
  5. add flour mixture to butter mixture and stir slowly until well combined
  6. add chocolate, toffee and potato chips and stir in by hand
  7. shape into ¾ inch balls and place on lined or greased cookies sheets
  8. bake for 12-14 minutes or until golden
  9. cool on cookie trays for a few minutes before transferring to wire cooking racks
