Tomato Eggs

- 2 eggs
- 2 tbsp milk
- 6 cherry tomatoes, quartered
- ½ med green (unripe) tomatoes, sliced to ¼ inch thickness and halved
- ½ cup chopped up ham
- ¼ cup crumbled feta cheese
- salt, pepper to taste
- ¼ tsp curry powder
- 2 chopped up sprigs of oregano
- heat up a non stick skillet on medium
- in a separate bowl, whisk together eggs, milk, curry powder, and salt and pepper
- pour egg mixture into the hot pan and immediately start to stir
- add green tomato as soon as eggs start to set
- stir until eggs are almost done and then add the remaining red tomatoes, ham, feta and oregano.
- continue to cook for 1 minute or until red tomatoes are just starting to soften
- remove from pan and serve
you can easily double or triple this recipe for more than one person but it makes a great single person's meal as is!
