Tomato Eggs

  • 2 eggs
  • 2 tbsp milk
  • 6 cherry tomatoes, quartered
  • ½ med green (unripe) tomatoes, sliced to ¼ inch thickness and halved
  • ½ cup chopped up ham
  • ¼ cup crumbled feta cheese
  • salt, pepper to taste
  • ¼ tsp curry powder
  • 2 chopped up sprigs of oregano
  1. heat up a non stick skillet on medium
  2. in a separate bowl, whisk together eggs, milk, curry powder, and salt and pepper
  3. pour egg mixture into the hot pan and immediately start to stir
  4. add green tomato as soon as eggs start to set
  5. stir until eggs are almost done and then add the remaining red tomatoes, ham, feta and oregano.
  6. continue to cook for 1 minute or until red tomatoes are just starting to soften
  7. remove from pan and serve
you can easily double or triple this recipe for more than one person but it makes a great single person's meal as is!
