Summer Scrambled Eggs

  • 2 eggs
  • 2 tbsp milk
  • salt and pepper to taste
  • ¼ cup sliced or cubed ham
  • ½ cup sliced cherry, grape or mini heirloom tomatoes
  • 2 tbsp cottage or ricotta cheese
  • 1 tsp chopped up chives
  • 1 tsp chopped up cilantro
  1. heat a non-stick skillet over medium heat
  2. in a small bowl, whisk eggs with milk and salt and pepper
  3. pour eggs into the skillet and stir constantly until almost about half cooked (still a little bit runny)
  4. add ham and cheese and continue stirring until cheese is well mixed in and the eggs are almost done (no runny eggs left)
  5. add tomatoes, chives and cilantro and cook until tomatoes are warm and just starting to get squishy and juicy
easy to increase this recipe for more than one person, just multiply ingredients by the number of people you are cooking for.
