I know recipes have been few and far between on here lately. Mostly because the majority of the recipe development I do these days is for my other baby, Food Bloggers of Canada! But I wanted to share this quick and easy peach salsa that I created last month as part of a campaign FBC did with California Cling Peaches – mostly because it’s so bright and colourful and it tastes delicious.

I’ve eaten this peach salsa with nachos, of course (because I freaking love nachos) but it’s also been spectacular with pork chops, chicken (you eat a lot of zero point chicken breasts on weight watchers and it’s nice to have a zero point accompaniment to go with them) and I’ve mixed it in with rice to give it a little more interest!
It’s very easy to make – canned peaches make this a dish you can whip together in minutes any time of year. Add in some onion, peppers, cilantro, lime juice and salt and pepper and you’ve got a zippy salsa that has a perfect mix of sweet, savoury and spicy.

This looks yummie and I want to try it right away. I started doing a similar salsa last summer and it’s been a favourite of all of us together with barbecue or just on its own. I used mangoes instead of peaches but it looks very similar.
