Simplicity on a plate comes in the form of grilled nectarines or peaches with crumbled feta and sprigs of mint. Arranged neatly on a plate it’s quick, simple and delicious.
I feel like summer disappeared and I missed it somehow.
I did not buy flats of blueberries or bags of fresh, local peaches. I left half my raspberries hanging on the vine after becoming overwhelmed with the sheer amount that appeared this year.
I barely took my camera out. That makes me sad. I had my phone camera, which I love because it’s quick and easy and fits in my pocket.
But I love the process of taking photos on a DSLR. I love that it slows me down, forces me to think… As maddening as it can be at times, the process of it is oddly soothing to me.
I did manage to pull it out on a few beach trips and I carried it around religiously for 2 weeks during a whirlwind work trip through Montreal and Southern Ontario. But it only made it out of my bag during two days of driving in Ontario. I was a little disappointed in myself.
Still, the phone camera kept me going and I’ve been enjoying posting to instagram with those little food and art snapshots (you can find me on instagram as mhchipmunk.)
It was on instagram that I initially posted phone photos of this little fruit salad and people seemed to love it. So I thought I would turn it into another “Simplicity” post just like the avocados with lime on toast that I did earlier in the year.
I made it with nectarines but there is still time to make it with delicious ripe peaches. I even think it would work well with plums!
The nectarines were broiled and glazed with Summerland Sweets Apple Pie Syrup which I have been hoarding since discovering it on my Okanagan trip last August and using it in a sour cream peach pie. But, I just found a spot in Vancouver where I can buy it and I also just discovered they do mail order! (yay!).
- a few stone fruits like peaches, nectarines or plums, sliced in half
- maple syrup or apple pie syrup for glaze
- feta cheese
- mint leaves
- place the fruit halves skin face up on a broiler pan (you can also do them on the grill) and broil for a few minutes
- turn right side up and glaze with syrup
- allow them to broil until fruit softens and syrup starts to caramelize (but don't let it burn!)
- remove from grill and cut up into slices
- arrange on a plate and sprinkle with crumbled feta
- arrange mint leaves between slices
You don’t need the Apple Pie Syrup to make this – a maple syrup glaze will work just as well. I also tossed the finished nectarines in with some granola and yogurt.
When you’re working with just a few ingredients and a very simple dish, use the best ingredients you can find and the flavours will do all the work for you!

What a coincidence! I was looking for a recipe to use ripe peaches and came across your post. Perfect. I am going to make this salad but will use maple syrup instead of the apple pie syrup. My husband will love it.
We’re heading up to the Okanagan this weekend. I’ll have to watch for the Summerland Sweets Syrup and buy some peaches while we’re there so I can make this when we get back.

Feta and mint are two of my favourite things on fruit, along with a little cayenne. And while it felt like summer never really happened I think this weekend will make up for it – it’s SO hot!
Delicious! I would never have thought to put feta with peaches! I just found a great peach margarita recipe so that drink and this salad seems like a perfect Friday night dinner to me! =)
